Irish Moss Organic

Irish moss, also known as carragheen, is a red alga which grows along the rocky parts of the Atlantic coast of Europe. It contains nearly 10% protein and about 15% mineral matter, and is rich in iodine and sulfur. Because of its abundant cell wall polysaccharides it will form a jelly, and act as an emulsifier and thickener when processed with water. Irish Moss can be used in sweet deserts, ice-creams, shakes, mousse, and pies etc. It has become a popular ingredient in raw foods.
